These varieties grow together in the cool northern France region of Alsace, and are as such very well suited to the cool Adelaide Hills region. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"o-p c-tasting__description-main-blurb ContentPasted0\"\u003e\u003cspan data-olk-copy-source=\"MessageBody\"\u003eThe grapes of both varieties were hand picked in the cool of the morning, and very gently whole bunch pressed together in an airbag press. The juice was cold settled overnight, and then racked to fermentation with light, fluffy lees included. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"o-p c-tasting__description-main-blurb ContentPasted0\"\u003e\u003cspan data-olk-copy-source=\"MessageBody\"\u003eFollowing a long cool fermentation to retain freshness and fruit characters the wine was racked and matured on light yeast lees in tank for 2 months prior to bottling.
